Elena Simone,
Full Professor

PRINCIPAL
INVESTIGATOR

Dr Elena Simone obtained her BSc and MSc degrees in Chemical Engineering from the University of Pisa, Italy. She was then awarded a PhD in the same discipline from Loughborough University, United Kingdom. She has been a Lecturer in Food Crystal Engineering from 2016 to 2021 in the School of Food Science and Nutrition at the University of Leeds, UK. In September 2021 she was appointed Associate Professor at the Politecnico of Torino, Italy. Her research interests include process analytical technologies, data processing and sensor integration, crystal engineering, food colloids and fat crystallization. Dr Simone's research has been funded by the Royal Society, the Royal Academy of Engineering, the Newton Fund, the Compagnia San Paolo, the Piano Nazionale Ripresa e Resilienza (PNRR) and the European Research Council (ERC). Furthermore, the group collaborates with several industrial partners including Syngenta R&D, Arla Foods and Nestlè.

Cecilia Fiore
PhD

POSTDOCTORAL RESEARCHER

Cecilia graduated in Pharmaceutical Chemistry and Technology at University of Torino in 2019. PhD in chemistry at Alma Mater Studiorum, University of Bologna. She joined CryForm in 2023 and currently working on Pharmaceutical and Food crystal engineering and crystallography. Her interests focus on the discovering of new crystal forms of APIs and natural supplements.

Emmanuele Parisi
PhD

POSTDOCTORAL FELLOW

Dr Emmanuele Parisi obtained his BSc and MSc in Chemistry at the University of Naples Federico II (Italy). He obtained a PhD in Chemical Science in 2022 and then joined CryForm in the same year. His research interest is mainly on organic molecules crystallography and its relation to the main quality attibutes of particles for pharmaceutical, agrochemical and food applications. He is a member of the Italian Association of Crystallography (AIC).

Giulia Del Duca

PHD STUDENT

Giulia graduated in Pharmaceutical Chemistry and Technology at University of Siena (Italy) in 2020. She is currently attending a PhD course in Chemical Engineering at Politecnico di Torino where she is working on a project related to the production of novel sustainable formulations stabilized by crystalline particles.

Emilia Prandini

PHD STUDENT

Emilia graduated in Chemistry at the Università Statale di Milano (Italy). She is currently attending the PhD Course in Chemical Engineering at Politecnico di Torino in collaboration with the Cambridge Crystallographic Data Centre (CCDC). The main aim of the project is to investigate how crystal structure affects the surface properties of particulate materials.

Danilo Candela

PHD STUDENT

Danilo earned his Bachelor's degree in Chemical and Food Engineering in 2020 and later pursued a Master's degree in Chemical and Sustainable Process Engineering, which he completed in 2022 at Politecnico di Torino. During his academic journey, he focused on a diverse range of courses encompassing Biotechnologies and the Food Industrial field. In 2023, he embarked on a new professional chapter by joining Cryform. In his current role, he is dedicated to the development of innovative crystalline soft materials, with a focus on their application as traditional fat substitutes in novel food products.

Pierfrancesco Latorre

PHD STUDENT

Pierfrancesco graduated in Chemical and Sustainable Process Engineering at Politecnico di Torino (Italy), in 2023. He is currently attending a PhD course in Chemical Engineering at Politecnico di Torino. The focus of the project is mainly to investigate and gain insight, using computational chemistry and experimental techniques, on the phenomenon of crystallization at interfaces such as liquid/liquid or gas/liquid ones.

Michele Lessona

PHD STUDENT

Michele graduated in Chemistry at University of Turin in 2023. He is currently attending a PhD course in Chemical Engineering at Politecnico di Torino in collaboration with Nestlé. The aim of the project is to Understand and control the crystallization behaviour of complex edible fats.
